These are fantastic! My husband said they are the best sugar cookies he’s ever had and my kids had no idea they weren’t the regular kind. I love them because they are easy to make and one is filling so it’s easy to stop at that! 🙂 It is a little tricky to work with the dough, but we sorted it out! Love these!

We made these today and used corn starch. They worked out so well and are insanely delicious with the almond extract flavor. I had to go gluten and dairy free due to inflammation and I wasn’t sure if I would get to have a few cookies this Xmas. So thank you for this recipe because these cookies are sooooooo delicious. We made the strawberry and powder sugar frosting too. ❤️⛄

These cookies are the best healthy cookies I’ve made/eaten. They taste just as good or better than regular (unhealthy) cookies. My family doesn’t know they are gluten free, dairy free, and refined sugar free. Seriously so good. The texture is perfect. They hold their shape and form perfectly and are perfectly sweet. Slightly crispy on the outside and chewy on the inside and they actually taste buttery and sweet but not too sweet! Megan nailed this recipe!

I made the dough for my volunteer group for a celiac youth. The others had regular sugar cookie dough and this one was SO much better!! Unbelievable taste & texture. Dough was refrigerated for 1-2 hours before we started rolling it out and they baked up perfectly.

There are two types of coconut oil. The refined one has no flavor or smell of coconut.

Forgot to mention that I melted vegan chocolate chips and dipped half the cookie. I’ll try the frosting next time but this was easy and delicious.
