]]>Finding this recipe has helped my 5 year old grandson deal with his T1 diabetes diagnosis. Not kidding. The low carb count is so fantastic for him. These cookies help him feel not so deprived of sweets.
I double the recipe and use 1 cup of buckwheat flour and 1 1/2 cups of packed almond flour. I lowered the coconut sugar to 3/4 cup. I also add a teaspoon of cinnamon. The dough is always perfect. I roll a spoonful into balls and then flatten them.

I needed something yummy to fill me up that was going to nourish my body after a few days of junk! This hit the spot. Perfect as is, but I also added extra lemon juice, extra cilantro, a huge handful of kale, a few cubes of sweet potato, and mushroom powder. This recipe is endless with possibilities! Delicious
]]>Can I use maple syrup instead of coconut sugar? I’m thinking that might be too much liquid, but want to make sure. I’d also like to use olive oil instead of coconut oil and would welcome your thoughts!

Good recipe but the cook times are off in my experience. For years in my instant pots, while 3 minutes cook time works for thawed salmon, I’ve been cooking frozen salmon at 3 minutes with a 3 to 8 minute natural release. Cooking at 5 minutes gives overdone salmon. Also, vegetables need at least as much time as salmon in my experience. They come out perfect at 3 minutes when cooked with the salmon if they are in a glass bowl on top the trivet. If frozen the will not even be cooked.

]]>These are unbelievable! I made them ahead and refrigerated them overnight before cutting them. There was so much liquid on the parchment I wrapped the roll in and I was afraid they would be dry but these turned out amazing. I would only expect them to be better if baked same day. These made me so incredibly happy as I’ve not had cinnamon rolls in probably over a year since being gluten free. I would love to experiment with the psyllium husk for other recipes, the real powerhouse of this recipe!
