This is so good!! My husband is not vegan, and he hates kale—I didn’t tell him that was the green stuff in there (I used a food chopper and shredded it very small to make it more edible) and he just said “this is delicious” I am so glad I didn’t half the recipe, the full pot of it will be gone in no time!!

First time making this soup,,,I was inspired from the “Amy’s” organic soups., Quinoa, Kale & Red lentil. 3.5 stars. I used vegetable broth and added more water for a soupier soup. I would definitely make again. Hardy soup! :)))

I’m not the greatest cook; however, I follow directions very well. My question is can this soup be made in a crock pot instead of on the stove top? How would I adjust for that?

Quinoa should always be rinsed to remove the bitter saponins from the surface.

My 2024 Winter Recipe Obsession! Megan, you never disappoint and this recipe is no different! I love the heartiness of the protein and the brightness of the veggies! I’ve already made it 4 times this year and have tried it with frozen spinach and kale, fire roasted tomatoes for spiciness and it’s perfect every time! Thank you for sharing your genius with us!

Sounds delish! I really like the canned version of this, by Amy’s. But would rather make it myself. I see that you left out the jalapeno and the cilantro,..which is in the canned version.

I made this soup and it was not edible. Why you might ask? Because I accidentally swapped the cumin with CINNAMON! (face palm) So, I will be making this again because it looks delicious. Just thought I’d post this so you can learn from my mistakes, double check your spices! haha!
